I own a Pixelbook Go, similar to Chromebooks, and I’m wondering if it will be enough this class. I’m not sure what to look for software wise. Thanks.

If you can download and run software (Excel, VS code or Brackets.io, and Tableau) on it, then it should be fine. If not, then you’ll need to borrow a computer from BYU or use a library/lab computer.
